Carla’s Pasta Recipe for Shrimp Bruschetta featuring Carla’s Chipotle Pesto

Ingredients

1 Lb. Size 16-20 Shrimp peeled, deveined, and shell removed
 2 cups Carla’s Chipotle Pesto
 1 T Extra Virgin Olive Oil
 1 Bunch Cilantro
 ¼ cup Feta Cheese
 1 Baguette (cut into 1 inch thick crostini/slices)
 


Preparation


Execution

1.  Heat Olive Oil in a sauté pan over medium high heat. 
2.  Add Shrimp and caramelize/brown lightly.
3.  Add Chipotle Pesto and heat until shrimp are cooked completely. 
4.  Remove from heat and set aside.
5.  Grill sliced bread over medium heat, or toast in oven at 350 F for 8-10 minutes.
6.  Spread Chipotle Pesto on toasted bread.
7.  Top bread with cooked shrimp, garnish with cilantro and feta cheese. Serve.
