Ingredients

1 Red Bell pepper
1 Green Bell Pepper
1 Red Onion
1 Yellow Squash
1 Green Squash
1 Eggplant
1 cup Ricotta Cheese
1 cup Mozzarella Cheese
2 ea. Pre-Baked Pizza Crust
1 cup Carla’s Sundried Tomato Pesto
 


Preparation


Execution

1. Slice and grill all vegetables over medium high heat.
2. Dice vegetables into bite sized pieces.
3. Toss cooked vegetables in 1 cup Carla’s Sundried Tomato Pesto. 
4. Spread ½ cup Carla’s Sundried Tomato Pesto on pizza crust (1/2 c per crust)
5. Scatter pre-grilled and marinated vegetables on pizza crust.
6. Scatter dollops of ricotta cheese
7. Spread mozzarella cheese topping.
8. Bake in 350° F oven for 12-15 minutes until crust is crispy and cheese is nicely melted
